Snow Ice cream
Really very simple, very quick!
Ingredients:
1 can of condensed sweetened milk
1 tsp vanilla axtract
8 cups snow (clean, freshly fallen)
Serves about 4. 
Takes about 5 minutes to make from start to serve.
Mix about a teaspoon of vanilla extract into a can of condensed sweetened milk. Put about 8 cups (I used a soup ladle to measure since the handle is longer and it measures a cup) of CLEAN FRESH FALLEN snow into a large bowl and pour the milk mixture over the snow. Cut the mixture into the snow until well combined. Serve immediately.
You can also use vanilla bean or mix in chocolate syrup to taste for chocolate favor.

Two-faced Baked Salmon

My Two-faced Baked Salmon recipe-ish: about a 7lb salmon serves about 8-10 people
Filet the salmon (sockeye). Place skin-down on baking sheet.
 Preheat oven to 450f.
Mix in a bowl : 1/4 cup brown sugar, 1 tbsp soy sauce, 1 tsp ginger, 1 tbsp sesame seeds. Spread mixture over 1 fillet.
in another bowl mix: 1/4 cup soft butter, 2crushed garlic cloves, 1 tsp minced fresh rosemary, 1 tsp minces fresh oregano, dash salt, dash pepper. spread mixture over the other fillet.
Bake about 15-20 minutes or until desired done-ness. (remember eating undercooked meats can be dangerous ;-) (but oh so delish).

Blackberry Pie Filling Recipe
4 cups ripe washed blackberries
1/4 cup flour
1 cup sugar
1/4 cup butter sliced into pats

Gently mix berries with flour and sugar.
Spread berry filling in prepared pie crust of your choice.
Place pats of butter evenly spaced on top of filling.
Bake at 350 for 30 minutes.

Crumble Crust Recipe
2 cups flour
1/2 cup butter softened
3 tsp Baking Powder
1 tsp Vanilla extract (liquid or powder)
1/2 cup sugar
1 egg

Cut together flour and butter.
Add baking powder, vanilla, sugar and egg to flour mixture and mix well. Reserve 1/4 cup of mix for top of pie. Spread the rest of the mixture evenly to cover bottom and sides of an 8" pie pan evenly. Crumble the 1/4 cup of reserved mixture evenly over the top of the pie filling. Bake as directed in your pie recipe.

Apple Time!
With all those un-ripe apples I made 3 loaves of apple cinnamon raisin bread, 6 pints of diced and spiced apples in syrup & a crockpot full of apple butter. The ones that didn't go in the pot either went into compost or sliced an thrown at the deer.

Wild red huckleberries can be found growing out of old tree stumps all over the property. These tangy, blueberry-like fruits give a refreshing zip to muffins and pancakes.
